Back to School Breakfast Hacks!! Pancakes & Bacon!!



Another installment in my Back to School Breakfast Hacks series.  Today we tackle pancakes and bacon!  We always seem to have homemade pancakes in our freezer because whenever I make pancakes, I always am sure to make extras.  Freezing pancakes is a great way to always be able to offer your family something warm for breakfast.  

I will be the first one to tell you that I used to purchase frozen pancakes.  The "good" kind though from the Dutch bakery.  However when inspecting the ingredients I discovered they were no better than the big name brands as far as mystery, unpronounceable ingredients, so  making them is the way to go for us.  

Let's face it, making pancakes is super easy. You can make them from your favorite mix or you can make them from scratch.  I am going to share with you my version of a very simple, and delicious pancake recipe that I like to call my 1+1+1 pancake batter.  This formula is simple.  For every cup of flour you use, you will need a cup of milk, one egg and a teaspoon of baking powder.  I also add a tablespoon of sugar and a pinch of salt.  Whisk it all together and get your griddle ready!  Pancakes any way you like them!  Add blueberries, strawberries, chocolate chips, bananas, walnuts pecans, you name it!  Whatever is your favorite is what you should make.  



If you are going to freeze these for later, then I recommend removing the pancakes from the griddle to a cooling rack.  Allow the pancakes to cool completely and then package as desired.  You can layer these between parchment or freezer paper in a plastic container on in a large plastic bag that you can just reach into and grab what you need or you can individually portion the pancakes as you like.  Our preference is three to a sandwich bag.  You can do what you like.  If you have smaller children, one or two may suit your needs better.  If you have teenage boys, well, then put the whole batch in one bag cause you know they are going to eat those Gethro Bodine style!

When the time comes to reheat, simply remove your short stack from the freezer bag and wrap in a paper towel.  Place in the microwave for 45 seconds to a minute and then enjoy.  You will want to test the time because all microwaves differ int their power and cooking intensity. 

While I was cooking the pancakes, I also had a couple pounds of thick cut bacon going in the oven.  Many of you know I like to cook my bacon on a sheet pan in the oven.  This makes life a lot easier and I don't have to tend a pan of splattering grease while trying to do something else.  I will tell you that I have never perfected cooking bacon in a skillet.  Can't do it to save my life.  Burns every time!  This sheet pan method is tried and true and  I learned it while spending many years in restaurant kitchens.  This is how they do it for buffets and breakfast rushes.  While they par cook theirs and finish on the grill per order, I cook mine all the way.  We like ours just after it has become crisp but before it gets too dark.  Baking it in the oven can help to regulate the perfect strips for your taste.  



When the bacon is done I remove it from the pan immediately and then place it on layers of paper towel to absorb any extra grease.  Allow them to cook completely then roll them up into the paper towel and place in a plastic freezer bag.  Pop them all in the freezer and reach in and grab what you want.  Re-heat for 10 to 20 seconds or whatever suits your fancy and you are good to go!

Back On Track For Back To School! On the Go Breakfast Cookies!!


These breakfast cookies are so delicious you will forget that they are good for you!  Filled with oats, almond butter, nuts and dried fruits, these cookies will disappear fast and your family will be asking for more!



Today I am participating in a "Back to School Breakfast Treats" collaboration with my friend Gretchen from Gretchen's Bakery channel!  If you are not familiar with Gretchen's channel, please be sure to pop over and watch her homemade apple pop tarts video when you are done here and be sure to hit that subscribe button!  Gretchen is truly amazing!

My contribution for this collab is going to be a protein and fiber packed breakfast cookie that will take you from morning till lunch and give your body what it needs to keep on going when those late nights and early mornings of the back to school schedule begin to catch up with you!  

These cookies are egg free, dairy free, gluten free and they can be vegan if you sub out the honey I used here for more maple syrup, molasses, brown sugar or even agave nectar.  You choose.  

I have used almond butter in my cookies but you can use peanut butter, cashew butter or sunflower butter if you prefer.  I have used lots of oats, golden flax sunflower and hemp seeds to bulk up the fiber and protein.  Then for crunch and sweetness I have added chopped dates and chopped pecans.  For moistness I added mashed bananas and coconut oil.  

Your imagination is your only limit here.  You can change these up to suit your tastes by adding dried fruits or nuts of any kind, shredded coconut, even a cup of chocolate chips would be nice.  I can think of several combinations that would be just as delicious!  This recipe is so versatile I know once you try it you are going to love it!



This recipe makes 24 cookies, if you drop them using the #16 disher which is approximately 1/4 cup in size.  Just make sure to flatten them slightly with a wet spoon before placing in the oven to bake.  These were perfectly done in just about 18 minutes in my oven.  Yours may differ.

These cookies are perfect for grabbing on the go.  Toss a couple in your bag and you are ready for the day along with your big mug of coffee or tea.  Ready to face whatever the day may bring, body nourished and caffeinated!  I prep these cookies by putting each one into a separate sandwich bag and place them in an airtight container on the counter.  If you don't think you will eat these inside of a week, then place them in the fridge for up to two weeks or in the freezer for up to three months.  These can thaw on the counter overnight for early morning enjoyment.

Breakfast Cookies


Ingredients

1 cup mashed banana
1 cup peanut butter or nut butter
1/2 cup honey**
1/2 cup pure maple syrup
1/2 cup coconut oil, liquified
3 cups rolled oats
1 cup whole wheat flour or gluten free flour
1/2 cup ground flax seed
1/4 cup sunflower seeds
1/4 cup hemp seed
1/2 cup protein powder* (see note below)
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 cup dried fruit such as
     cranberries
     cherries
     dates or raisins
1 cup chopped nuts such as
     almonds
     pecans or walnuts (optional)


Step by Step Instructions


Preheat the oven to 350°F.

In a large bowl, stir together the banana, coconut oil, peanut butter, honey, maple syrup and vanilla.

In a small bowl, combine the oats, flour, flax seed, sunflower and hemp seeds,  protein powder, cinnamon, and baking soda.

Stir dry mixture into wet mixture until combined. Stir in dried fruit and nuts.

Drop dough onto cookie sheets that have been lined with parchment or a silicone mat.

Using a metal spatula dipped in water, press each mound of dough into a cookie approximately 2 1/2 inches in diameter and 1/2 an inch thick.

Bake, one sheet at a time, for 13 t 15  minutes or until lightly browned.

Remove from oven and allow to cool on the pan for five minutes before transferring to a wire rack to cool completely.

Store in an airtight container or zip top  bag for up to 5 days.  These can be stored in the fridge if you live in a super warm area.  This will prolong their freshness.  You can also freeze for up to 2 months. Thaw on counter before serving.

*NOTE:  If you don't have protein powder you can increase the flour by 1/2 cup
*NOTE: If you wish for these cookies to be vegan, sub out the honey for molasses, agave or golden syrup.

Easy Cheesy!! One Pot, Stove Top, Mac & Cheese!!



We had such an amazing response from all of you regarding the macaroni and cheese recipe we mentioned in the review we did for the Copper Chef pan that we decided to do a video for you!  This mac and cheese is inspired by the recipe that is included in the cookbook that comes with the pan.  I tried it their way.  This is my way.  I love this mac and cheese and I know you will too.

Keep in mind that this recipe defies everything you have ever known about making homemade mac and cheese.  There is no roux.  There is no cooking the macaroni separately.  This is seriously done all in one pan and takes about 30 minutes from beginning to end.  What you have when you are finished, is the most amazing, creamy and delicious mac and cheese ever!  You can spruce this up or down any way you choose.  Their basic recipe is good, but mine is better.  I have added more liquid and more cheese.  I have also boosted the flavor with lots of extra seasonings which the original recipe did not call for.  I have added both garlic and onion powder as well as dry mustard, salt, pepper and Worcestershire sauce which I think needs to go in mac and cheese!  Because cheese and Worcestershire sauce are best friends!



I really love this concept.  Being able to enjoy a great serving of macaroni and cheese that is not baked is really nice.  This is super creamy and cheesy.  I have added more cheese and more water to my recipe because I felt like it needed it and it gives the finished product a nice cheese sauce which I love.  This will serve 8 to 10 people as either a side dish or main course.  With a salad and crusty bread this is going to be a very satisfying comfort food meal.

I think you could easily make this in a pan that has a ceramic coating but I don't recommend this method if you are using a stainless steel, other nonstick or cast iron pan.  I would just worry that it may burn too easily.  You never know till you try so you could always give it a go and report back!

Mac & Cheese



Ingredients

1 pound elbow macaroni (dry)
2 cups heavy cream
2 cups milk
3 cups water
1 tablespoon corn starch
4 tablespoons butter
1 teaspoon salt
1 teaspoon cracked black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon mustard powder
1 tablespoon Worcestershire sauce
4 cups shredded cheddar cheese


Step by Step Instructions


Place all ingredients in a large ceramic skillet. I used my Copper Chef square pan.

Stir and set over medium low heat covered.

Stir occasionally until the mixture is thickened and the macaroni is done to your liking. 

This entire process can take between 25 and 35 minutes.  You will want to stay close and monitor the mixture to be sure it is not burning or that the macaroni is not getting overcooked.

Christmas In July ~ The Holidays Are Coming ~ Easy Holiday Chocolate Truffles!!



Christmas is five months from today!  So it is fitting that this will kick off our Christmas in July week!  The holidays are coming series always holds a special place for many of my subscribers.  Many of you have told me how much you look forward to those videos.  So as a special treat this year we are hosting an entire week of holidays are coming videos!  We are kicking it off with these super simple and delicious holiday chocolate truffles.  

I have been making these for years and have wanted to share them with you for the last five years, but they never seemed to fit in at the time when I had so many different things planned for you in years past.  Well today I am pleased to share with you these wonderful holiday treats!



These truffles are very easy to make and they will pack a powerful punch with your friends and family when you present them with boxes full of these delicious chocolate gems as holiday gifts.  Really only three ingredients are needed.  Chocolate chips, condensed milk and extract of your choice.

You melt everything together, mix well and chill until you can roll into tiny balls of chocolate goodness.  You can leave them plain, roll them in cocoa, ground nuts, coconut, coffee powder, chili powder, powdered sugar, crystal sugar, sprinkles, jimmies or sea salt.  The possibilities are endless.



These should be kept in the refrigerator until they are given or served.  You can also make these with white chocolate if you like or even peanut butter chips.  Same concept.  I have used chocolate condensed milk, but for many years used regular old plain sweetened condensed milk.  So really the only limit here is your imagination!

Chocolate Truffles


Ingredients
3 cups chocolate chips
1, 14 ounce can sweetened condensed milk
1 teaspoon of the extract of your choice OR
1 tablespoon of your favorite liqueur

Coatings for outside:
cocoa powder
ground nuts
flaked or ground coconut
sea salt or flake salt
sprinkles
jimmies
espresso powder
crushed peppermint candies
toffee bits

Step by Step Instructions

Combine chocolate chips and condensed milk in a large bowl.  Stir to combine.

Melt in a double boiler until  it forms a fudgy mass.  Alternatively you can do this in the microwave on high for one minute, then stir until it becomes a fudgy mass.

Refrigerate for at least 30 minutes or until the mixture is scoopable and somewhat solid.

Scoop truffles into teaspoon sized balls.  Roll between your hands then roll in desired coatings.

Place on a baking sheet lined with either a silicone mat or parchment.

Refrigerate finished truffles for 30 minutes before serving.

Truffles should be stored in the refrigerator or in a very cool spot after complete.

Truffles will stay fresh in the refrigerator for 3 weeks.

No Mix? No Problem! Homemade "Rice-A-Roni" Style Spanish Rice!



Last week my friend Heather of the Kneady Homesteader Channel mentioned that she was having a hard time getting Spanish rice just right.  This was not the first time she mentioned it to me.  She likes to use the "Rice-a-Roni" brand of Spanish rice mix, but in an effort to get away from the box mixes and make her own, she was less than enthused about the outcome of several attempts.  So I publicly promised to make her a video of how I do it.

This is that video.  In my head I am humming the jingle, "Rice-A-Roni the San Francisco Treat, Rice-A-Roni the flavor can't be beat....."  Well, you get the idea.  According to their website:  The DeDomenico family all enjoyed an old Armenian dish consisting of rice, vermicelli pasta and chicken broth. The rice and pasta were sauteed in butter before the liquid was added, giving the dish its distinctive taste.

In 1958, Vince DeDomenico decided to take this recipe and produce it for sale in grocery stores. He placed the rice and pasta in a box, and added a dry seasoning mix in place of the liquid chicken broth. Because this product was made up of half rice and half pasta, he decided to call it Rice-A-Roni.

Chicken Rice-A-Roni was first introduced in the northwestern states in 1958. With it came the first Rice-A-Roni commercial, featuring San Francisco’s Cable Cars and the now famous jingle. Created in San Francisco, Rice-A-Roni would soon be known to all as "The San Francisco Treat®!".  Chicken RICE-A-RONI

The product was an immediate hit. Over the next couple of years, Rice-A-Roni spread across the United States and by 1962 was available for all of America to enjoy. Building on the success of the original Chicken flavor, several other varieties were added. Beef, Spanish and Fried Rice-A-Roni came along next and also became very popular.

Anyone who grew up in the 70's and 80's most likely ate this product and loved it.  I know I did!  My mom often put this out for a side dish at supper.  Now that we are older and wiser, we are making an effort to move away from the processed, packaged, mixes of our youth and try to make those things from fresh, whole ingredients from our fridge and pantry.  This is very simple to do and you are going to love it!



I admit that this one does have one small secret ingredient and that would be the tomato and chicken bullion that will give this dish the taste that I think Heather is missing from her package version.  Aside from that, you already have what you need.  Rice, broken angel hair or vermicelli pasta, onion, garlic, bell pepper, taco seasoning, canned tomatoes and butter.  That's it!  The other secret is in the preparation.

You can use butter like I have or you can use oil, of your choosing.  I like to sautee the veggies just a little before adding the pasta and the rice.  You will want to toast both of those until they take on a brown hue and emit a lovely nutty aroma.  That is when you know it is time to move on, add your taco seasoning, broth and tomatoes.  Give it a good stir and then cook like any other rice!  Bring to a simmer, turn down the heat, cover and cook for 15 to 18 minutes or until the liquid is absorbed.  Take off the heat and then allow to sit covered for an additional 10 to 15 minutes.  Then fluff with a fork and serve.  



I used broken angel hair pasta and I could have broken it up even more.  You can also choose to use some orzo pasta if you like, but I wanted to stick  closely to the boxed version for this so the angel hair it was.  You can also adjust the seasoning if you like by adding more or less.  I have used my homemade taco seasoning, but you can use your favorite packet version.  

I hope that you give this version of homemade Spanish style Rice-A-Roni and I hope Heather gives it a try and finds that it hits the mark for her!  I really think that the tomato and chicken bullion is the secret here!

Spanish Style Rice-A-Roni


Ingredients
2 cups parcooked or long grain rice
1 cup broken angel hair or vermicelli pasta
1, 14 ounce can petite diced tomatoes
1/2 cup onion, chopped
1/2 cup bell pepper, chopped
2-3 cloves garlic, minced
4 cups tomato and chicken broth
(see note)
2 tablespoons taco seasoning
4 tablespoons butter


Step by Step Instructions

Melt butter in a large heavy bottomed skillet or stock pot over medium high heat.

Add onion, garlic and bell pepper.  Stir well to coat.

Add rice and broken pasta to the pan and stir to coat.

Continue over medium high heat, stirring occasionally until the pasta and the rice take on a nutty aroma and a slightly toasted appearance.    You may hear popping during this process.

Add taco seasoning and stir well.

Add tomato chicken broth and tomatoes and stir well to combine.

Bring to a simmer, turn down to medium heat and cover.  Cook for 15 to 18 minutes or until the majority of the liquid appears to have been absorbed.  Do not remove the lid.

Turn off the heat and remove the pan to a cool burner or trivet.  Allow to sit and steam for 10 to 15 minutes before fluffing and serving.

NOTE:  I have used Knorr Caldo Tomate con sabor Pollo.  Or Tomato broth with chicken.  This bullion can usually be found in the Latin foods section of your grocery store.  It has a red cap and is next to the chicken and beef bullions.

Giving With Heart: The Best Gift Of All!


The time for gift giving is upon us.  Some of us are facing dire economic times and things may not seem very festive because we feel like we simply can't afford to give as much as we would like to or as much as we have given in the past.  I think we all need to re-evaluate our giving and spending habits!  Yes, without a doubt, it is lovely and wonderful to spoil those we care about and indulge them and lavish them with expensive things that they want and desire.  However, I think the time is upon us when we need to regroup and take stock and rethink how we do things.  We should be taking a page from the books of our forebears and our grandparents who lived with much less but seem to have lived much happier and simpler lives. 


Giving does not have to mean giving a lot of expensive stuff.  This should be a happy and festive time to share of ourselves and give from the heart.  It may seem trite and obvious, but a homemade gift is really the very best gift you can give.  Of all the gifts I have ever received,  I count the homemade, handmade ones to be my most treasured possessions.  A clay dog and A clay bear that my girls made when they were small and even though they have seen better days, they sit on my dresser.  A flower pot filled with tattered silk roses and a Popsicle stick recipe holder that I received one Mother's day.  A plaster "fish dish" that sits on my shelf and is where we put the money when the pizza delivery guy comes on "order out" pizza nights.  The special spice rack that you see behind me in every video introduction that my loving husband Rick fashioned out of my grandmother's cutting board.  A "scrap" afghan that my Mommom crocheted when I was small that is  full of so many colorful sections that she called it her "Joseph's Coat" afghan after the Bible story. 

Then there is the newest addition to this list which I am certain will continue to grow, is a gift I received this year, for my birthday.  You see, my family knows that my birthday is not exactly my favorite day.  I don't usually want to celebrate it, opting for a small observation.  My husband and my children always seem to find interesting ways to say Happy Birthday to me.  This year, my girls took a Mason jar and used a chalkboard sticker and some ribbon and some post it notes.  They wrote "10 Things We Love About You" on the outside of the jar and they each wrote five post it notes with messages of how they loved me.  Some were funny and some were sweet and some were simply touching in a very deep way, helping me to know that somewhere along the line, I did a pretty darn good job of being a mom.  This gift is certainly priceless. 

Giving should be from the heart, not from the wallet.  We live in a world where we always want the biggest, the best and newest stuff, and often when we get it, we find out that it isn't all it's cracked up to be.  Then the next big thing comes along and we start the process all over again.    Down size your expectation and reel in your idea of greatness and you can be a little happier.  Think smaller and simpler not bigger is better. 

Give a pan of brownies or a loaf of homemade bread with a jar of jam.  How about some hot cocoa mix or a beautiful bowl of seasonal fruit?  If you have some simple tools, you can use scrap lumber or even palate wood to fashion, rustic handmade keepsakes, like my spice rack.  You can take an inexpensive tile and pop some silicone bumpers on the bottom to make a beautiful cheese board or trivet.  Costs literally pennies and when wrapped up and given will be used and appreciated for years to come.  Every time a hot casserole comes out of the oven and placed on that trivet, the recipient will thank you and think of you!   The possibilities are endless!   Don't even get me started on what you can put inside of a Mason jar!  That is what we will be talking about next week!

If you keep a food storage and you want to keep your gifting on a strict budget, what better time to start rotating some of those number 10 can items than during the holidays?  How about a jar full of brownie mix done up right with nuts and toffee chips?  Pop a pretty ribbon on that jar and a tag with instructions on how to prepare it and that is a gift that can be made on a cold February evening when the snow is coming down.  Then you will be remembered as well as praised for such a delicious gift!  Make a delicious breakfast in a jar by layering some oats and dried fruit such as freeze dried apples or dried cranberries or bananas along with a handful of pecans or walnuts and again a bow, a tag and instructions on how to make some delicious fruit and nut oatmeal.  This is easily achieved when you step back and take a look at what you have chosen to store.  If you are like I am, you could make anything you like from sweet to savory.  Breakfast, lunch or dinner can be gifted!  Make a great basket up with a jar of homemade pasta sauce, a box of pasta and some homemade seasoning.  A jar of chili and a bag of homemade corn muffin mix, add water, stir and bake.  Who would not love receiving any of these gifts?

I can hear some of you saying, "I don't have a food storage and I don't craft, and I don't do anything cool what can I do?"  You don't have to make everything  yourself to make a heartfelt gift.  You can spend time with the people you love helping them to achieve a goal or complete a task.  You can simply spend more time, making a difference in the lives of the ones you care about.  The truth of the matter is,  all the stuff, is just stuff.  Memories are made when we spend time together.  Remember this above all else. 

So this year, give from the heart.  Give simply and give lovingly.  Embrace the idea of giving something that is useful and consumable, like food or drink.  This encourages people to share and sharing is what this season is all about! 

I hope this encourages you to fear not and know that giving great gifts need not be expensive when you take a bit of time to think about what really matters!
